INGREDIENTS:
- Fixings, including your choice of: chopped onions, sliced green onions, cooked crumbled bacon, cooked crumbled sausage, chopped spinach, pesto, chopped peppers, chopped tomatoes, cilantro, and so many fun cheeses!
- 2 large eggs
- Kosher salt
- 2 tablespoons grated cheese (I like Swiss)
DIRECTIONS:
Plug in a griddle and heat to medium-high. Put all the fixings you want except the cheese on one side of the griddle to heat. Beat the eggs with a pinch of salt in a small bowl and pour on the other side of the griddle. Flip the eggs over once and sprinkle with the cheese. Put the fixings on top of cheese and fold the omelet in half. That’s it! Oh, I use two spatulas to turn the eggs!
