Christine's Twice Baked Potato Casserole

INGREDIENTS:
- 8 Golden potatoes, baked
- 1/2 cup butter, unsalted, room temp
- 4 oz cream cheese, softened
- 2/3 cup sour cream
- 1/2 cup half and half
- 1/2 tsp. garlic powder
- 1 TBSP fresh chives, chopped
- 2 cups cheddar cheese, shredded
- 10 slices bacon, cooked and crumbled
- 1 tsp. salt
- 1/2 tsp ground pepper
TOPPING:
- 2 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1 tsp fresh chives, chopped
- sour cream
Preheat oven to 375 degrees. Cut and mash baked potatoes, skins can be left on with Golden potatoes. Add butter, cream cheese and sour cream and mash to combine. Add the half and half and mix until you reach desired creaminess. Stir in remaining ingredients (except toppings). Add potato mixture to a greased casserole dish. Sprinkle with bacon and cheese and bake in the oven for 25-30 minutes until the cheese is melted and the potatoes are warmed through. Remove from the oven and top with fresh chives and sour cream.
