Christine's German Pancakes

INGREDIENTS:
- 4 tablespoons salted butter
- 6 large eggs
- 1 1/2 cups whole lactose-free milk, such as Lactaid
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon fine salt
- 1 cup all-purpose flour
- Pinch of freshly grated nutmeg
DIRECTIONS:
Preheat oven to 425 degrees F. Place the butter in a heavy-duty 10 x 15-inch jelly roll pan and place in the oven to melt.
Beat the eggs, milk, sugar, vanilla, and salt in a large bowl until smooth, about 1 minute. Whisk in the flour and nutmeg until smooth. Swirl the butter around to coat the jelly roll pan and pour in the batter. Bake until golden brown and the surface is puffed and very bubbly, about 12 minutes.
